From the vibrant streets of Naples to the refined kitchens of London, Australia, and Calgary, Chef Giuseppe di Gennaro has carved a distinguished path in the world of authentic Italian cuisine.

He has contributed to the success of award-winning restaurants, including Il Sogno, Capo, Borgo Trattoria, and Cotto Italian Comfort Food. Chef Giuseppe was notably recognized as the #2 Best New Restaurant in Canada by EnRoute Magazine and led Noosa Waterfront in Australia to achieve the prestigious Chef’s Hat distinction for Best Italian Restaurant in Queensland.

His role in opening Trattoria was pivotal, ensuring that everything—from the menu design to the kitchen operations—ran seamlessly. His personal touch is to be found in the hospitality, execution, and charm aspects of our restaurant, and in those little that make every guest dining at Trattoria feel like family.

Respected for her consistency and calm under pressure, Aurora is a cornerstone of the kitchen. Born and raised in Calgary, she graduated from SAIT’s culinary program in 2005 and has spent over a decade working alongside Chef Angelo, her longtime mentor.

Aurora has a remarkable talent for execution and an intuitive sense of flavor, driven by a genuine love for Italian cuisine. She’s passionate about crafting food that not only tastes incredible but feeds people with care and intention.

Her energy thrives in the fast-paced rhythm of a busy kitchen, where communication and teamwork are everything. Now, with her daughter working beside her, Aurora continues to inspire by example—sharing her skill, passion, and commitment to quality with the next generation.
